Instructions:
1. Preheat the oven to 400º F. Line a 12-cup muffin tin with paper liners or spray each cup with cooking spray. You can also use a brush to line the cupcake liners with a bit of oil. Or, use silicone cupcake liners and spray/brush with oil. (Here is the brush I use).

2. Combine flour, sugar, baking powder, and salt in a large bowl and stir together.
3. Add in eggs, oil, and milk and mix until lightly combined. (You can use a simple spatula or hand beater). Here’s the hand mixer I use. Do not overbeat.

4. Use an ice cream scoop into each muffin liner and bake for 15-20 minutes or just until golden.
5. Spread some butter and eat while warm!
